Sweet and Sour Smoothie – Chikku, Banana, Raisin Smoothie with Pomegranate and Grape

How are you all doing today? So, I am back with another breakfast smoothie, completely inspired by left over fresh and dry fruits from the kitchen counter. But you never know how good they taste till you combine then and taste them. So I was so sceptical to mix these two flavours. Cause the brownish layer below is really sweet ( no added sugar, just the sugar from the fruits) and the bright pink layer on top is slightly sour. But they taste really nice together!

Ingredients :-

  1. Banana – 2
  2. Chikku – 4
  3. Raisin – 3 tbsp
  4. Oats – 1/2 cup
  5. Milk – 1/2 cup
  6. Grapes – 1/2 cup
  7. Pomegranate – 1/2 cup

Instructions :-

  1. In a clean blender bowl, add banana, raisins, chikku pulp, oats and milk
  2. Blend together for a nice thick smoothie
  3. Pour into your serving glass
  4. Now clean the blender bowl and wipe with a dry cloth
  5. Add grapes and pomegranate seeds and blend to form a juice
  6. Add water if necessary to help the grapes and pomegranate blend
  7. Pour the juice over the banana smoothie layer already in the glass
  8. The consistency would be like that of an ice cream so if you like you may either add more milk or use a spoon to enjoy the smoothie

Chiku Banana Oat Smoothie

We love healthy breakfast’s at home. So I try my level best to bring out variations to our table every morning so that we are not bored of eating healthy everyday.  I have always known about the health benefits of oats, but it was only very recently that I decided to incorporate oats as a ‘first choice’ element in my everyday breakfast ideas. Since you are limited to just one grain, it is quite hard to achieve the goal of bringing about variations in breakfast as there is only so much you can do with just oats.

The goal, my dear friends, is to not use oil, sugar, processed cheese and sometimes omit dairy products all together. It’s a fallacy to believe that you need to drink cow’s milk in order to gain the required amount of calcium for your body. There are many other kinds of milk that can be easily made at home and yes it’s not as easy as buying milk from the store. Almond milk, soya milk, coconut milk, rice milk etc. The most largely used alternate to normal Cow’s milk is either Soya or Almond milk and the latter option is what  I have used in my smoothie today.

During winters, we love making Chikku/ Chikoo milkshake but I make sure the milk is at room temperature. Chikku is a wonderfully sweet fruit with various health benefits ranging from boosting your immunity to promoting weight loss and preventing anemia. It is really easy to know if they are ripe. Just press the skin of the fruit with a finger and if it is nice and soft, then it is ready to be consumed. Many people like to eat it with the skin on, but I prefer it without the skin simply cause it has a very “Mud” like texture. But the sweet soft pulp inside is a wonderful delight! Remember to remove the big black seeds from within before you add them in the blender.

Ingredients  :-

  1. Instant Oats – 5 tbsp
  2. Banana – 3 – 4 large (peeled, cut to coins and frozen)
  3. Chikku – 5
  4. Almond Milk – 2 cups
  5. Vanilla Extract – 2 tbsp
  6. Chocolate Sauce – just for the drizzle ( optional)
  7. Almonds – for garnish ( optional)

Instructions :-

  • Wash the chikku well and cut into two halves. Then spoon out the pulp from within. Press the pulp between your fingers to remove the seeds
  • Once you have all the chikkus deseeded and pulp removed, add the pulp into a blender bowl
  • Add the frozen bananas, oats and half the almond milk into the bowl and turn your blender on to low
  • Slowly add rest of the almond milk into the running mixer followed by the vanilla extract. Blitz for 5 whole minutes
  • Then pour into your smoothie mugs or glasses, drizzle a little chocolate over the top and garnish with almonds

 

Note :-

  • I have not added sugar because the chikku and banana where sweet enough, but you may add sugar according to taste
  • I used room temperature milk cause the banana was cold enough
  • Increase or decrease the amount of almond milk depending on how thick/light you like your smoothie

 

Oats and Banana Breakfast Bowl

 

Its been drizzling all night and morning and the cold wind seems to some how find its way through shut doors and windows. I can hear a bird call out and my neighbour sneeze every now and then. Yes winter is very close. The light in my dining room is a shade of blue and grey and my white marble floor seems to look like two men blowing plumes of smoke at each other. The only thing moving is yellow toy tortoise that my son refuses to let go of. Yes my morning looks like a bottle of grey paint was splashed on a big ball of cotton!

So while I am deciding what to bake and make for this week I felt an urge to make banana bread. But it would be nicer if I could transform the same flavours into a bowl of healthy oats right? So that is how this bowl came about. This is my healthy yet flavourful bowl of breakfast banana and oats.

Ingredients :-

  1. Oats – 3 tbsp
  2. Milk – 1 cup
  3. Coconut Sugar – 1/2 tsp
  4. Walnuts – as much as you like
  5. Banana – 1 sliced
  6. Cinnamon Powder – 1/4 tsp

Instructions :-

  1. Bowl milk in a bowl on low flame and add oats
  2. Once the milk comes to a bowl, reduce the heat and cook till the milk reduces and the oats is nice and thick
  3. Now pour the cooked oats into a bowl
  4. Start from one end and add walnuts, bananas, sprinkle coconut sugar and cinnamon powder at the end
  5. Serve right away!

 

Double Chocolate Banana Bread

Hello there.. How’s everyone doing today? I am in a good and chirpy mood today. No particular reason actually. Just happy … Its almost the weekend and guess what I have left in my fruit basket? Yes. It’s another bunch of ripe bananas. So what else can I make with them. This time I made a double chocolate banana bread loaf. This one is also a one-bowl recipe and doesn’t need a lot of time either. I personally think it’s a chocolate banana cake. Its nice and moist and sweet and it has chocolate! So why not! You can either have it for breakfast with you coffee or after lunch as a quick dessert. (Guess what I packed as dessert for my husband today :p)

Chocolate Banana Bread
Chocolate Banana Bread

Ingredients –

Flour – 1 + ½ cup
Banana – 3 medium size (mashed or pureed)
Baking Soda- 1 tsp
Salt- a pinch
Coco Powder – 3/4 cup
Milk- 2 tbs
Powdered Sugar – 3/4 cup
Eggs – 2
Butter – 1cup
Vanilla Extract – 1 tsp
Chocolate Chips – ½ cup (or as much as you choose)

Instructions –

Preheat the over to 180C and line or grease the cake pan with butter and set aside

In a big bowl, first whisk the eggs and butter till nice and pale. Then add milk, vanilla extract and mashed bananas and mix well

Place a sieve on top of the bowl and add flour, sugar, baking soda, salt and cocoa powder and sieve into the banana mixture

Using a spatula mix the contents of the bowl well till the dry mixture has combined well with the wet ingredients

Pour into the cake pan. Sprinkle chocolate chips on top of the batter

Bake for 30 – 40 mins or till a toothpick inserted comes out clean

Best served hot with coffee
