Hello my Dear Wonderful Readers!

How are you all doing today? Summer is here. Its just March and it is so hot and sticky that by afternoons I have to make tons of buttermilk and juice to keep my son hydrated. Given that little babies are always running around, they are constantly sweating and losing so much water from their bodies. While making the juice, it suddenly dawned on me that strawberries will be out of the market very soon. so before they go away for another year, I wanted to make the best of it with a little strawberry cream cheese tart. But I wanted my own little twist to it, so I added green cardamom powder to the filling. Oh! I would be lying if I said I dint have more than a piece of the tart. IT WAS HEAVENLY!! Its really simple to make and it doesn’t need a lot of prep work. You could buy pre baked short crust tart shells but there’s no fun in that. So I made my own from scratch.

I used the same recipe as I had for my White Chocolate Persimmon Tartlets. Do click on the link for that.

Now for the filling which is as easy as it gets!

Ingredients :-

  1. Cream cheese – 200 gms
  2. Heavy Cream – 200 ml
  3. Sugar – 4 – 5 tbsp
  4. Vanilla Extract – 1 tbsp
  5. Green Cardamom Powder – 2 pinches

 

Instructions :-

  1. Remember to cool the cream before you start using it. For best results use the cream directly from the fridge
  2. Next in the bowl of your stand mixer, add the cold cream and whisk on medium
  3. When you see the consistency go from liquid to soft peaks, add the cold cream cheese
  4. Whisk again on medium for a minute
  5. Then add the vanilla extract and green cardamom powder
  6. Turn the speed a little higher and add the sugar one table spoon at a time
  7. Once you are done with all the ingredients set to cool back in the fridge till your tart shells are ready

For the strawberries:- 

I needed around 3 packs for strawberries but that depends on how you arrange the strawberries in the tart.

  1. Clean and wash the strawberries. Dry them completely
  2. Using a sharp knife, cut the tops off the strawberries in such a way that they would stand if kept inverted

 

Assembling the tart

  1. After the tart shells have cooled down completely, add the whipped cream and cream cheese mixture to the tart shell
  2. Evenly spread it throughout the shell
  3. If you find that the mixture is too thin, put the tart back in the fridge for 15 mins
  4. Then take it out and arrange the strawberries over it
  5. Finally dust with the powdered sugar
  6. Serve right away!!

Mint Chocolate Chip Brownies

 

 

 

 

 

 

 

Don’t you just love mint and chocolate chip! I do!! Yesterday seemed to be a brownie day so a decided why not make a mint chocolate chip brownie. I had a batch of cream cheese in the fridge too so I decided why not! Ha! The sad part of begin the only person in my house who knows to cook is that I can’t hope for some one to make a batch of nice home baked soft gooey brownies. But this recipe is not that hard to make so once its done, you do not have time to worry about being the only cook at home.

Ingredients :-

  1. Butter – 115 gms
  2. Chocolate Chips – 250 gms  + 50 gms ( for cream cheese)
  3. Flour – 100 gms
  4. Sugar – 250 gms + 50 gms ( for the cream cheese)
  5. Eggs – 3 ( room temp)
  6. Salt – 1/4tsp
  7. Vanilla Extract – 1 tsp
  8. Cream Cheese – 200 gms ( room temp)
  9. Mint Extract  – 1 tsp
  10. Green Colour – 4 – 5 drops ( depending on how green you want it)
  11. Egg yolk – 1

Instructions :-

  1. Pre Heat your oven to 180 C and line your brownie tray with baking paper
  2. In a heat proof bowl, melt butter in a double boiler and add chocolate chips. Continue to stir till all the chocolate has melted
  3. Set aside the chocolate butter mixture to complete cool down. Meanwhile mix four and salt in another bowl
  4. Once it is at room temperature, add eggs and vanilla extract. Now add the flour to the wet ingredients one spoon at a time
  5. Do not over work the batter but mix till all ingredients have combined
  6. Now transfer 70 % of the batter into you prepare brownie pan
  7. In another bowl add cream cheese and sugar. Whisk till nice and creamy. Then add mint extract, egg yolk and colour as required
  8. Slowly spoon this mixture over the brownie mixture
  9. Then top off the cream cheese mixture with the left over chocolate batter
  10. Now run a butter knife through the batter to make swirls
  11. Pop the brownie tray into the pre heated oven and bake for 30 mins or till a tooth pick inserted comes out clean
  12. Let it cool completely before slicing

 

Cinnamon Rolls – With a Cream Cheese drizzle

Another breakfast opinion is the good old cinnamon roll. Cinnamon is one of my favourite spices and I love it cause it reminds me of sweet and wonderful apple pie my mother makes. My mom knows exactly how to take a recipe and breathe life into every element to make it the best dish ever!

Here is my recipe for a quick cinnamon roll.

Ingredients:- 

  1. Flour – 3 cups
  2. Salt – 1/2 tsp
  3. Butter – 2 tbsp ( melted)
  4. Sugar – 1/2 cup (powered)
  5. Yeast – 2 + 1/2 tsp
  6. Milk – 1/2 cup
  7. Egg – 1
  8. Cinnamon Powder – 3 tbsp
  9. Vanilla Essence – 1 tsp
  10. Butter – 1/4 cup
  11. Brown Sugar – 1/2 cup
  12. Cream Cheese – 225 gms
  13. Cream/ Milk – 1/2 cup
  14. Sugar – 1/2 cup

Instructions:-

  1. Firstly heat the milk till lukewarm. then add sugar and mix well. Then add yeast into the milk + sugar mixture and set aside till nice and foamy
  2. In the bowl of your food processor, add 2 + 1/2 cups of flour , salt and run the mixer just once
  3. Once the yeast mixture has foamed well, while the processor is running on low, slowly add the milk yeast mixture to the flour
  4. Then add the butter and egg
  5. Process the dough till it forms a nice ball. Sticky when pinched but holds together. Empty the contents of the bowl onto a lightly floured surface and knead for another 3 – 4 mins
  6. Now drop this dough into a lightly greased glass bowl for it to rise. Give it an hour or 2
  7. Now for the filling combine the vanilla, brown sugar and cinnamon powder and set aside
  8. Preheat your oven to 180 C
  9. Once the dough is ready roll to out on your lightly floured counter top. Try rolling it out into a big square
  10. Now lightly butter the surface of the rolled out dough
  11. Evenly spread the cinnamon powder mixture al over the butter surface of the dough
  12. Now gently roll the dough in wards to form a long roll
  13. Slowly cut the dough into equal circles ( I used a thread)
  14. Finally line the inside of your baking dish with baking paper and arrange the cut cinnamon rolls and lightly butter the tops of the rolls for that golden crust
  15. Let the rolls sit for another half hour for them to rise again. Once they have increased in size pop them into the oven
  16. Bake for 25 – 30 mins
  17. While the rolls are baking, cream together the cream cheese , sugar and milk. Set aside.
  18. Once the rolls have baked, let them cool off on a cooling rack
  19. Once cooled, grizzled the cream cheese over the rolls
  20. Enjoy
